Artichokes, one of the oldest foods known to man, were cultivated for food in the Mediterranean basin thousands of years ago. Most of today’s artichokes come from the coastal areas of California.
Selection and Storage:
Premium quality artichokes are soft green in color and have tightly packed leaves. To store, sprinkle with water, package in an airtight plastic bag and refrigerate.
Preparation and Cooking:
Wash and cut off stem. Snip tips. Artichokes can be boiled, steamed or stuffed.
