Nectarines

General Information:

Nectarines are classified as stone fruits because they contain pits, or stones, inside.  Other common stone fruits are peaches, plums and pluots.

Selection and Storage:

When selecting nectarines look fruit with a deep yellow or orange-yellow color under a red blushed skin.  It is best to store nectarines at room temperature until fully ripe.  Ripened, they will have a sweet aroma and will give slightly under pressure.  Store in the refrigerator for no more than a couple of days once ripe.

Preparation and Cooking:

Nectarines should be washed prior to consumption or cooking.  They may be eaten out of hand, made into preserves or used as an ingredient.  Nectarines may be poached, baked, pureed or even grilled.
