3/4 cup orzo
3/4 cup red and yellow cherry tomatoes halved
2/3 cup low sodium garbanzo beans, rinsed
1/4 cup basil sprigs
1/4 grated parmesan cheese
2 TBL olive oil & vinegar dressing
1- cook orzo according to package directions. Drain and do not rinse, pour into a large bowl.
2- Prepare ice bath by placing a few ice cubes in with water using a medium bowl.
3- Place broccoli in a covered microwaveable dish with 1 TBL of water, microwave on high for 30 seconds. Drain and tranfer to ice bath for 30 seconds. Drain and add to orzo.
4- Add tomatoes, garbanzo beans, basil, cheese and dressing to orzo and broccoli. Toss and season with salt and pepper
