4 Corn tortillas
1/2 cup chopped onions
1/2 cup sliced mushrooms
1/2 cup diced tomatoes
4 egg whites
4 whole eggs
1/2 cup crumbled chihuahua cheese
1/2 tsp. garlic powder
1/4 cup salsa
1/4 cup guacamole
Heat a large non-stick pan coated with cooking spray on medium heat
Place tortillas into skillet 1 at a time and heat each side for 1 minute, set aside on a plate and respray skillet
Mix eggs in a bowl and pour into skillet, let stand for 1 minute and add vegetables and cheese.
Stir gentley 2-3 minutes or until all are scrambled.
Top tortillas with eggs and season with garlic,salt and pepper . Top with salsa and guacamole
