Mushrooms

General Information

There are many types of mushrooms available today, each with their own shape, texture and flavor.  Mushrooms with open caps have a stronger taste while closed-capped button mushrooms have a milder taste.

Selection and Storage

Mushrooms should be firm and plump with tight compact caps. To store, keep them loosely covered so air can circulate.  Do not store in plastic bags. Do not clean mushrooms before storing.

Preparation and Cooking

Mushrooms should be cleaned removing dirt with a damp cloth or washing off under running water.  Mushrooms can be stir-fried, stuffed, sautéed, marinated or served raw.

Popular Varieties

White or button mushroom is the mainstay of the fresh mushroom market.  Its color ranges from white to beige, and it is very mild when eaten raw.  The flavor increases when cooked.

The portabella has a wide, flat cap and their dark, almost black gills are exposed.  Its meaty flavor and firm texture make it ideal for grilling and roasting.
