Eggplant

General Information

Because of its firm texture and flavor, vegetarians often use eggplant as a meat substitute.  Everyone can enjoy the versatility and fine taste that eggplant brings to main courses, as well as, light bites.  Eggplants have a dark purple skin with creamy flesh.

Selection and Storage

Select eggplants that are heavy for their size.  To store, keep eggplants wrapped in plastic in a cool, dry place or in the refrigerator vegetable crisper.

Preparation and Cooking

Commonly, eggplant is cooked before eating.  Always wash before use, and eggplant can be peeled or cooked with peel on.  Eggplant Parmesan is a favorite eggplant dish, and as mentioned before, makes a great substitute for beef. 

Popular Varieties

American eggplant has an egg-shaped globe appearance.  It is purple, almost black in color with a green stem.

Japanese eggplant  is smaller, thinner and has a purple skin with a calyx that may also be purple instead of green.  It is sweeter and less bitter than larger globe varieties.
