Watermelons

General Information

Over 20 types of melons are available on the market, but just a few are commonly found on a regular basis.  The most common varieties are cantaloupe, honeydew and watermelon.  Watermelon is sweet, juicy, bright and fun.  They are not just for summer and are available year round.  Beneath the green and white rind, watermelon flesh is bright pink and may be seedless or with seeds.

Selection and Storage

Select a firm, symmetrical watermelon that is free from bruises or dents.  The watermelon should be heavy for its size and the underside of the watermelon should have a creamy yellow spot from where it sat on the ground and ripened in the sun.  At home, wash the watermelon throroughly before cutting.  Whole watermelon should be kept at room temperature, while cut fruit should be in a covered container and kept in the refrigerator for up to four days.

Preparation and Cooking

Melons are a favorite summertime treat for kids and people of all ages.  Simply slice and enjoy or get creative.  Try a watermelon sorbet, watermelon popsicle or a spicy and fresh watermelon salsa.

Popular Varieties

The yellow watermelon has a canary yellow flesh, often seedless, with occasional black seeds. Tasting no different from the common red watermelon, when ripe, yellow watermelons have the same signature two-toned green skin.

Jubilees are one of the largest varieties with weights up to 45 pounds.  It is long with a light green rind that has dark green stripes.  The flesh can range from pink to red.

Icebox watermelons are so called because they are small enough to fit whole in the refrigerator. They are round with a dark or light rind and range in size from 5 to 15 pounds
