Peaches

General Information

A ripe peach is one of the most delicious summertime fruits or get a taste of summer by using peaches year round.  Peaches are classified as stone fruits because they contain pits, or stones, inside.  Other common stone fruits are nectarines, plums and pluots.  Peaches are unique stone fruits, because they have a soft fuzz on the skin, which is safe to eat or can be peeled.

Selection and Storage

At home, store peaches on the counter at room temperature until ripe.  Tree-ripened varieties are sometimes available and this means that the peaches reached their maturity before being picked.  

Preparation and Cooking 

Spices and seasonings that go well with peaches are almonds, cinnamon, nutmeg, ginger, coriander maze, sherry, marsala, rum and armaretto.  The versatility of peaches has grown beyond just a fresh fruit, it is now used as a good match with poultry, pork and veal dishes.  Peaches will always remain a favorite ingredient for sweet and luscious desserts.

Popular Varieties

Donut peaches are slightly larger than a golf ball and have a whitish-yellow skin brushed with red highlights.  Short and squaty the tender skin is covered with a very fine fuzz.

White peach varieties are fast becoming very popular, and their consumer acceptance is fast outpacing other peach varieties and even white nectarines.
