Mangos

General Information

Mangoes are the most consumed fruit in the world.  Mangos vary in size, shape, coloring and taste according to their ripeness and variety. They range from green to red.

Selection and Storage

When ripe, a mango gives to gentle pressure.  Choose plump mangos.  Ripen at room temperature.  Refrigerate ripe fruit in a plastic bag.

Preparation and Cooking

Mangos when added to a fruit salad, add flavor, color, aroma and texture. Mangos must be peeled prior to eating out of hand.

Popular Varieties

Ataulfo is also called Manila or Champagne mango, it is typically 8 to 12 ounces with a flattened oval shape.  Its skin is green yellow to deep canary yellow with a few russet dots.  The flesh is a deep yellow color, soft with a very sweet slightly acidic flavor that has an almost buttery texture.  It is arguably the favorite mango of the mango experts from all corners of the world.

Tommy Atkins is the brightest mango, its skin distinguished by a deep red to purple blush.
