General Information
Limes have a variety of uses from flavoring to home cleaners. One medium lime (67g) has only 20 calories and provides an excellent source of vitamin C. Lime juice is excellent in marinades, beverages, salad dressings, guacamole, seafood and barbecue sauces, fish and meat stews, sorbets, and jams.
Selection and Storage
Limes should be firm, glossy and bright in color. Limes can be stored at a cool room temperature for a day or two but then should be stored in the refrigerator crisper or drawer, away from vegetables for up to two weeks. Freeze lime juice to use at a later time by squeezing the juice into an ice-cube trays and then transfer to a plastic bag. Thaw lime juice cubes when ready to use.
Preparation and Cooking
The outermost skin of the lime, the zest, is a valuable culinary resource for a number of dishes and is most often used grated. Also, the zest can be cut into strips and used to flavor poaching liquid for fruit.
Popular Varieties
The most common lime variety is the Persian. Persian limes are larger and have fewer seeds than Key limes.
Key limes are smaller and rounder with a thinner, more leathery skin that ranges from light green to yellow. A common use is in pies.
