General Information
The berry is a simple fruit, yet it encompasses a wide variety of crops. Of fruits classified as berries, the blueberry, raspberry and strawberry are among the most widely cultivated.
Selection and Storage
Look for berries of good color. Store berries in the refrigerator and wash thoroughly before use.
Preparation and Cooking
Berries can be enjoyed plain, with cereal, in a salad, over ice cream or in cakes, pies, muffins, pancakes or cobblers. Berries can be frozen in re-sealable freezer bags or containers that have a good seal.
Popular Varieties
Blueberries are sweeter the riper it gets. The dusty film on blueberry skin, called a "bloom", forms a natural waterproofing and helps protect the berries from them from the sun. Blueberries are one of the richest sources of disease-fighting antioxidants. They are also high in vitamin C and fiber and are naturally low in fat and cholesterol. Blueberries are sodium-free.
Blackberries taste best when their glossy shine becomes dull and their color is more black than purple. Some varieties contain seeds, and depending on ripeness blackberries taste tart to sweet. Blackberries are high in fiber and vitamin C and a good source of folate, potassium and other important minerals. They are cholesterol free and naturally low in fat and sodium.
Cranberries are plump, shiny and red with a firm, waxy, protective skin. This berry offers an extremely tart flavor and is rarely eaten raw. One-half cup of fresh cranberries offers ten percent of the recommended daily allowance for vitamin C and only 25 calories. Cranberries are high in pectin, a natural thickener.
Raspberries are plump, hollow and bright red. The distinguishing difference between the raspberry and the blackberry is the hollow core that is created in the raspberry when separated from its receptacle.
Strawberries vary in size and shape and this fruit turns a bright red to crimson when fully ripe. Strawberries provide a generous amount of vitamin C, potassium and dietary fiber, and they are being recognized in the medical world as a "super fruit" because of their high antioxidant level and ability to help prevent cancer and heart disease. One cup of strawberries contain about 45 calories and are cholesterol and saturated fat-free.
